Ingredients

2 medium cage-free or organic eggs
1 medium potato, grated
1/4 medium yellow onion, grated
pepper to taste
Tips
If any egg remaining in bowl after last pancakes dropped into frypan, just pour over top of each pancake.
Eat plain or serve with unsweetened apple sauce or light sour cream (ensure you add these to your Tracker if you use them).
Directions
Grate onion & potato into a bowl. Add pepper. Beat 2 eggs in a seperate bowl, then add to grated potato & onion. Season with pepper.
Put oil in frypan & preheat. Ensure oil does not get too hot. Drop spoonfuls of grated mix into hot pan, like pancakes. Let cook 2-4minutes, flip & cook 2-4minutes.
