Introduction

Ingredients

    2 small to medium leeks, chopped, using white and green
    2 small scallions, chopped
    1Tbsp olive oil
    1 cup whole wheat bread crumbs
    3 egg whites
    3 eggs
    250 ml (9 oz) low-fat milk
    50 grams (2 oz) Swiss cheese, grated
    2 spring onions, chopped
    1 tsp salt
    1 tsp pepper
    Nutmeg (optional, to taste)
    Oil for greasing the ramekins

Tips

The quiche can also be made in one quiche pan or pie plate. Bake the quiche for approximately 50-60 minutes until golden brown and set in the center.


Directions

Preheat the oven to 190°C (375° F).
Saute the scallions until glassy, and add the leeks. Cook both until the leeks are soft.
Pour into a large bowl to cool and combine with the bread crumbs.
In a separate bowl, whisk together the egg whites, whole eggs and milk.
Add the egg-milk mixture to the leeks and combine. Finally, add the grated cheese, salt, pepper and nutmeg.
Portion the mixture into six pre-greased ramekins and bake for 20 minutes, until the quiches are golden brown and set.
Serve with a green salad for a light lunch or dinner.
