Ingredients

    1 large filet of fresh salmon cut into 1-2 inch pieces
    2 cup broccoli florets cut into small pieces
    1 cup sliced carrots,
    1 cup sliced mushrooms,
    1 tablespoon fresh minced ginger
    3 tablespoons minced garlic
    1 tablespoon ground cumin
    2 tablespoons lemon juice
    1/2 tablespoon olive oil
    2 tablesoons mild curry paste (I used Patak's in the jar)
    1 can light coconut milk. (I used Trader Joe's brand)

Directions

In a large pan heat olive oil then add curry paste stir frying for 2 min. Add ginger, garlic and cumin and stir. Stir in coconut milk and heat through. Add vegetables and stif then put salmon on top. Cover and simmer for 10 min. Add lemon juice and stir til heated through. Garnish with fresh cilantro. Serve with rice. Makes 4 servings. I'm not sure the calculation on sodium was correct it didn't seem that salty and I'm on a salt restricted diet. I'm sure the sodium content was from the curry paste so use less to cut down if needed.
