Introduction

A slight adjustment to a recipe my mother makes and loves. Originally used ground beef, very good that way too. This version is NOT spicy (the chili powder adds flavor, but not spice - I swear, I have no tolerance for spiciness), add red pepper to your heart's content if you like to flame out your sinuses. Ingredients

    2 Tbsp Olive Oil
    3 Sweet Bell Peppers, chopped
    2 Small Onions, chopped
    4 Cloves Garlic, chopped
    1 lb Ground Turkey
    1 28-ounce can of diced tomatoes
    Half a 6-ounce can of tomato paste
    2 Tbsp Chili Powder
    1.5 Tsp Sugar
    1 Tsp Salt
    Pepper to taste
    A pinch of red pepper, if you like heat
    1 bay leaf
    0.5 Tsp Cumin
    0.5 Tsp Dried Basil
    2 16-ounce cans of red kidney beans, rinsed and drained

Tips

This is easily doubled for big groups (I actually halved the original recipe to write this).


Directions

1. Heat olive oil in big pot, add peppers, onions, garlic, and cook for 5 minutes, until they begin to soften. Remove to bowl (you probably don't have to remove them, could just throw the turkey in on top).
2. Put turkey in pot, brown while stirring to break it up.
3. Add cooked veggies back in, add rest of ingredients EXCEPT beans.
4. Simmer until liquid thickens (~30 mins)
5. Add rinsed and drained beans, heat through.
6. Serve! Good with corn bread, a sprinkle of grated cheese, and/or a dollop of sour cream.

Serving Size: Makes 6-8 servings, depending on how hungry you are
