Introduction

Ingredients

2 tbl. olive oil
1/2 cup chopped onion
1/2 cup chopped green or red pepper
3 cloves minced garlic
1 - 2 Tbl chile powder
1/2 - 1 Tbl ground cumin
2 cups canned plum tomatoes diced
6 cups canned black beans drained and rinsed with water
salt & perrper to taste
Directions
Heat olive oil in skillet. Add onion & green pepper. Saute until soft. Do not allow to brown. Add chile powder, ground cumin and minced garlic. Saute for 2 - 3 minutes.
Mash up to 1/2 of black beans if desired.
In a large pot mix black beans and onion mixture. Add tomatoes. Add 2 cups (or more if desired) of water. Cook over low heat for 10 minutes. Add salt & pepper as desired.
Add chopped jalapenos or green chilies to spice it up if desired.
Serve as is or with salsa, sour cream, or grated cheese.
Garnish with chopped scallions.
Serves 8 to 12.
