Introduction

I got the basics of this recipe from my food planner here on Spark, but I altered it 1) to feed my family, and 2) for the ingredients I had in the house.

I got the basics of this recipe from my food planner here on Spark, but I altered it 1) to feed my family, and 2) for the ingredients I had in the house.


Number of Servings: 8

Ingredients

    4C low sodium chicken broth
    4C 2% Milk
    2 Potatoes, cut small
    2 15oz cans White Beans
    4C broccoli, chopped
    1/2 C shredded Mexican Cheese
    black pepper to taste

Tips

My family is not fond of beans so I had to "hide" them by blending them. This also makes it a little thicker, which I prefer my broccoli soup to be. Otherwise, you can add them with the broccoli and cheese.


Directions

Heat broth, milk, potatoes, and beans in stock pot until potatoes are cooked through. Puree in blender or with hand blender. Add broccoli, cheese, and pepper. Simmer on med. until broccoli is done.

Serving Size: 8 - 2 cup servings

    I love creamy soups with chunks of veggies or pasta. It helps me feel like I'm actually eating a meal as opposed to having just a bowl of soup. I always use pureed beans or potatoes to thicken them. Frozen broccoli can be heated in the microwave and added to the cooked soup - saves a little time - 1/5/14
