Ingredients

1 c. brown rice
24 ounces cooked, cubed chicken breast
28 ounce can tomatoes with liquid
2 c. diced carrots
1 1/2 c. chopped celery
1/2 c. chopped onion
1/4 c. chopped yellow or red bell pepper
4 t. Knorr Caldo de Tomate (Tomato & chicken flavor bouillion)
2 t. ground thyme
1 t. Mrs. Dash Original seasoning blend
1/2 t. celery seed
Black pepper, to taste
4 c. water
Tips
Great way to use leftover rice. Also tastes good without the chicken - use a vegetable stock for a vegetarian main course.
Directions
Prepare brown rice according to package directions (approx. 2 cups cooked rice.)
In a 4-qt pot boil 4 cups of water, add Knorr Caldo de Tomate and stir until dissolved. Reduce heat to medium, add carrots, cover and gently boil for 5 minutes. Add can of tomatoes with the liquid, celery and onions. Reduce heat to med-low and simmer for 5-10 minutes or until vegetables are tender. Add chicken, brown rice, bell pepper, thyme, Mrs. Dash seasoning and celery seed. Simmer for an additional 10 minutes.
