Introduction

I got this from a Rachael Ray recipe and adapted it for my family. There's no egg and if you sub vegetable canola or olive oil for the butter there is no dairy in it. Ingredients

    1.5 pounds ground all-white turkey
    2 ribs of celery, finely chopped
    1 medium onion, finely chopped
    1 tablespoon poultry seasoning
    Salt and ground black pepper
    2 cups Fat Free chicken stock
    2 cups stuffing mix (I use part herbed part cornbread)
    1 tablespoon butter

Tips

Per the ingredients this is a 7+ (WW) per slice if divided into 6 slices.


Directions

Preheat oven to 400. Heat butter over medium high in a large skillet. Add onion and celery, cook until just translucent stirring constantly. Add poultry seasoning and pepper. Add the stuffing mixes to the pan. Add broth a little at a time stirring to coat. Keep adding broth until stuffing is fairly wet. You may not use all of it. Remove from heat and let cool. (add salt to taste at this point)
In a large bowl combine ground turkey and cooled stuffing until mixed (I use my hands). Line a baking sheet with parchment paper. You can give a quick spray of Pam or oil if you like. Transfer turkey/stuffing mix to the paper lined pan and shape into a loaf. Bake for 35-45 minutes or until a meat thermometer reads 160.
