Ingredients

    1.5c Couscous (dry)
    2c Boiling Water
    2 tsp Salt
    2 tsp Minced Garlic
    1/4 c Lemon Juice
    1/4 c Olive Oil

    1c Chopped Fresh Parsley (Packed)
    2 Tomatoes, diced
    1 Cucumber, cubed
    1 Bell Pepper, chopped
    1 Carrot, grated

Tips

You can add or subsitute whatever veggies you have on hand. The recipe is traditionally made with cooked bulghar, but I usually use couscous and itīs also great with quinoa.


Directions

Pour boiling water over couscous and let sit for 5 minutes. Add salt, garlic, lemon and olive oil and refrigerate for about 2 hours or until chilled. Before serving, mix in parsley and vegetables. Adjust seasoning if necessary.
