Introduction

Ingredients

    In a heavy pot, brown a pound of very lean ground beef. Break up the lumps well. Add the 1 1/2 cups chopped onion as this browns and stir. If it begins to stick, add a touch of water.

    Add entire can of tomato sauce & entire can of red beans. Add 1/2 can of water for each can to rinse out the remaining "goo" of sauce. Stir well. If pot is bubbling by now, reduce heat to low and simmer.

    Add 1 Tbs garlic, 1 Tbs chili powder & 1 Tbs oregano leaves. Stir. Add 1/4 tsp cayenne pepper, stir, and taste. Let pot simmer. Come back in 5 minutes & taste again. Adjust cayenne to taste. You can make this as many alarms as you want, but it can sneak up on you.

    Divide into 4 equal servings 1 1/2 cups each. Add some water to make the pot come out right.

Tips

Add 1/4 cup cheddar cheese per bowl. Count the calories! Good with Corn Cobb Cornbread.
P.S. Heat in sauce, not in meat.


Directions

Use a heavy, large pot, such a Dutch oven on the stove top to brown onions and meat together. Add spices, beans & sauce. Reduce heat.

At this point you could slow cook in crock pot, but to reduce liquids correctly, remove top & cook on high till thickened.
