Introduction

Number of Servings: 12

Ingredients

    1 cup oatmeal
    1 cup skim milk
    3 mashed bananas
    2 egg whites
    3/4 cup wheat flour
    1/2 cup splenda brown sugar (I use regular splenda here to reduce calories)
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt

Directions

1 cup old fashioned oatmeal
1 cup skim milk
Mix these 2 and soak for 1 hour
Then add
3/4 cup mashed bananas
2 egg whites, slightly beaten
Mix these dry ingredients together then add to oatmeal mixture:
3/4 cup sifted wheat flour
1/2 cup Splenda brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Mix batter then fill muffin cups. Bake at 400 degrees for 20 minutes.

You can add walnuts to the tops of muffins (these calories are not calculated in recipe)

    What a great (and easy) recipe! It doubles very nicely and makes decent size muffins (cupcake size). Great for a diabetic AND dietetic home! I'll surely make them again- thanks! - 10/13/09

    Um, wish you had posted the full directions (including soaking the oatmeal) in the first place. When I first logged on and printed the recipe it didn't include that little tidbit... no wonder mine turned out so dry and chewy. Will have to try these again when I have some more over-ripe bananas. - 11/12/11

    Excellent! I tried this recipe for a large group and had several request for the recipe. I made it a 3 different ways. 1. this recipe exactly. 2. Vegan- I replaced the milk w/ Soy Milk and the egg whites with a vegan egg replacer. 3. followed the recipe exactly but added fresh blueberries. - 7/5/09

    This is my variation and it came out great!
    1 egg, slightly beaten
    1/4 cup white flour, 1/2 wheat flour (3/4 cup)
    2 Tablespoons brown sugar
    1 tsp cinnamon
    2 ounces chopped pecans
    2 ounces mini unsweetened chocolate chips
    Bake at 400 degrees for 25 min
    At 20mins, it seemed uncooked.

    Hello, thanks for the great recipe. My three kids loved them as well as I. I did sprinkle dark choc chips on it for appeal and they were a hit. I enjoyed it much more than opening a bag of thinsations 100 cal snacks:) Will def make them again - 9/2/10
