Ingredients

    1 lb. turkey italian sausage
    1 1/2 tsp. crushed red pepper
    1 large onion, diced
    4 T. real bacon pieces (Oscar Meyer)
    2 cloves minced garlic
    3 14.5 oz. Swanson fat free, low sodium Chicken broth
    4 c. water
    1 c. light cream
    1 lb. russet potatoes
    2 c. chopped kale

Tips

You can substitute cauliflower for the potatoes to make this low carb


Directions

Preheat the oven to 300 degrees F. Put the sausages in a baking pan and roast for about 30 minutes, until cooked through. Drain on paper towels and cut into diagonal slices.
Cut the potatoes in half lengthwise and then slice into 1/4" pieces.
Place the potatoes, onions, chicken broth, water, and garlic in a pot and cook on medium heat until potatoes are done. Add the sausage and bacon, and salt and pepper to taste. Simmer for another 10 minutes. Turn the heat to low. Add kale, the cream, and more water, if necessary. Heat thoroughly and serve.
