Ingredients

12 pieces of turkey bacon,baked in oven or microwave
one can of black beans, drained and rinsed
one brick of frozen cut leaf spinach, thawed and drained
carton of egg whites
salsa
Tips
i use silicone muffin cup liners, but you could use cooking spray.
I used to make 6 muffin cups and store them for nearly a week of breakfasts, but I like them so much that I often eat them for lunch, so I started makeing 12 cups each week.
Directions
into each cup of a 12 cup muffin pan:
*crumble one piece of bacon
*add black beans to fill about half of each cup (you'll have about a 1/2 cup left over)
*divide the spinach into 12 parts, squeezing the water out before you add it to the cups
*slowly pour the egg whites through the spinach, filling the cups
* top them off with a teaspoon of salsa
bake on 350 for 20-25 minutes
