Ingredients

    3/4 C Prepared Oatmeal (with water)
    1 large egg
    1 Tbsp scallions, chives or other green onions
    1 Tbsp low-sodium soy sauce (to taste)

Tips

If you make a batch of oatmeal at the beginning of the week, this makes a quick busy-morning microwave breakfast!


Directions

Prepare the oatmeal with water, as directed on the package. When oatmeal is complete, spoon 3/4 C oatmeal into a bowl. Make a little "nest" in the middle by indenting the center and scooping oatmeal up the sides of the bowl. Crack the egg into the indentation. Microwave on high for 2 minutes (you may need to adjust depending on your own microwave - egg white should be just set, but the yolk not hard). Sprinkle chopped green onions/chives and soy sauce over the bowl. When you're ready to eat, just stir the egg into the hot oatmeal to finish it cooking!
