    4 c. (32 oz) fat free chicken broth
    4 c. water (adjust as needed)
    1 c. diced ham
    1 c. diced onion
    8 medium potatoes, diced
    5 cloves garlic, minced or crushed
    1 tsp. salt
    1 tsp. pepper
    1.5 c. instant mashed potato flakes


I used the potato flakes to make a richer broth. If you don't want to used mashed potato flakes, you can add extra potatoes and puree part of the soup, or leave as-is for a clear broth type soup.


Put everything in the pot except the potato flakes.
Bring to a boil, stirring occasionally to make sure potatoes don't scorch.
Reduce heat to a low simmer and cook until the onions and potatoes are very soft.
Turn off heat and stir in the mashed potato flakes.

Soup's on!

Serving Size: Makes about 20 1-cup servings.
