Introduction

Mini breakfast omelets, cook all at once and re-heat in the mornings. Mini breakfast omelets, cook all at once and re-heat in the mornings.

Ingredients

    10 eggs (still in the process of figuring out the perfect balance of eggs with other ingredients.)
    1 bell pepper (I use 1/2 green and 1/2 red)
    1 lb sausage (I like to mix 1/2 spicy and 1/2 regular or Italian. This is the roll of ground sausage)
    1 cup Cheese to sprinkle on top when baking.
    1 - 2 cloves garlic for more flavor

Tips

Can add other/different vegetables too. Just depends what you're in the mood for that week.


Directions

Preheat oven to 350°
Brown sausage
Add garlic and vegetables to infuse flavor.
Crack eggs into a mixing bowl.
Add sausage mixture to the eggs and mix thoroughly.
Power mixture into each brownie opening.
Sprinkle desired cheese on top.
Bake 13-15 minutes.
Let cool and then put each into it's own ziploc bag and freeze. In the morning get one out and put on a microwave safe plate and cook for ~1:40.

Serving Size: Makes 12, I use the Pampered Chef Brownie pan.
