Number of Servings: 6


    3 - 5- 6 oz Chicken breast
    1 Medium Shallot chopped
    4 tbls heavy cream
    4 tbls dry white wine
    2-4 tbls chopped chives
    2 cups thinly sliced portabella or shitake mushrooms
    Salt and pepper to taste
    2 tbls canola oil
    1/2 cup Chicken broth


I took this from eatwell but, doubled the cream sauce recipe and added spinach it was a hit with my entire family!


heat oil over medium heat. Salt and pepper chicken and cook in oil until done. Remove from pan tent with foil to keep warm. Add shallot to pan cook until aromatic (about 30 sec to min) add mushrooms and cook until soft (about 2 min) add wine and spinach cook until almost evaporated and spinach is tender, scraping any bits off the bottom (2-4 mins) add broth and simmer until reduced by half. Add cream and chives cook simmer for 2 mins add and coat chicken and serve.
