Introduction

Delicious!! The prep/cook time is a little long but you can make a big batch of it, refrigerate and eat off it for up to 5 days. Delicious!! The prep/cook time is a little long but you can make a big batch of it, refrigerate and eat off it for up to 5 days.

Ingredients

    3-4 cups of almond coconut milk
    1 cup of steel cut oats
    1tsp of vanilla extract
    3 tbs of honey
    4 oz of unsweetened applesauce
    28 g of craisins
    1 medium banana sliced
    3 tsp cinnamon

Tips

Bake steel cut oats for 20 minutes @ 300 degrees prior to cooking to reduce cook time.


Directions

In a large sauce pan add almond coconut milk, honey, cinnamon, applesauce and vanilla extract and bring to a boil. Stir in oats and reduce heat to med-low. Allow to simmer at med-low for 20 minutes. Preheat oven to 300 degrees. After oats are done cooking, spoon mixture into a pan (i used circular 8in pie pan). Slice a medium banana and add to mixture. Add the craisins and stir just until bananas and cranberries are coated. Bake in oven for 15 mins.
