Ingredients

    2.5 cups old fashioned oats (use GF oats to make gluten free)
    1 c plain vanilla yogurt (can sub greek)
    2 eggs
    1/2 c honey
    2 tsp baking powder
    1 tsp baking soda
    1 scoop (1/4 cup) whey protein powder
    1 tsp vanilla
    2 ripe bananas

Tips

Can sub flax seed for whey powder. Also, make gluten free by using gluten free oats. To increase protein, use plain greek yogurt.


Directions

Preheat oven to 350. Spray muffin tins with non-stick cooking spray or line with muffin cups. (If you use cooking spray, spray well--these stick!) Place oats in a food processor or blender. Pulse/blend for about 10 seconds or until mostly blended (I like to leave a few whole pieces). Add rest of ingredients and blend until combined. Add in whatever other items you like (chocolate chips, berries, coconut, nuts, etc). Divide batter among muffin cups. Bake for 18-20 minutes or until muffin bounces back and toothpick comes out clean. Cool on a rack.
