Ingredients

    Eggplant, fresh, 2 cup, cubes
    Bread crumbs, dry, grated, plain, .5 cup
    Egg, fresh, whole, raw, 1 jumbo
    Del Monte Petite Cut Diced Tomatoes, 4 cup
    Dry Marsala Wine, 1 Cup
    Howards Hot Pepper Relish, 2 tbsp
    Fennel seed, 2 tsp
    Salt, 1 tsp
    Pepper, black, 1 tsp

Tips

Serve with Turkey Meatballs and Basamati rice.


Directions

Toss eggplant in mixture in egg wash, then bread crumbs.
Spray non stick pan with Pam and saute with 2 tbspn of coconut oil.

In a large sauce pan, pour diced tomatoes and add seasonings and bring to a boil, then reduce heat and simmer for 30 min.
