Introduction

Indulgent taco cassarole. Less fat, made with venison. Indulgent taco cassarole. Less fat, made with venison.

Ingredients

    2 lb ground venison
    4 cup shredded cheese (any kind, I do fat-free)
    1 16-oz can fat free refried beans
    2 envelopes taco seasoning (Reduced Sodium)
    1 package tortillas (8-in)
    1 cup chopped onion
    1 14-oz can diced tomatoes
    1 10 oz can diced tomatoes & green chiles
    salsa for topping, if desired
    sour cream for topping, if desired

Tips

To make it more healthy (although this is an indulgent recipe) try using fat free and reduced sodium version of the foods to make it more healthy. Also make sure to use venison, or ground turkey or chicken. Beef has a little too much fat for this recipe, with all the cheese in it.


Directions

1. Preheat oven to 400 degrees F
2. Brown ground beef. Prepare according to directions on taco seasoning envelope.
3. Add tomatoes, and onions to ground beef and cook until onions are translucent. Stir often. (if not using onions, skip this part, but still add tomatoes to beef)
4. Heat refried beans according to can. This makes them easier to spread.
5. Spray 9 x 13 pan with olive oil.
6. Make 3 layers: Tortillas, refried beans, beef mixture, cheese.
7. Cover pan with aluminum foil and cook 25 minutes. Take off aluminum foil and cook 5 more minutes.
8. Top with salsa and sour cream if desired and serve.
