Easy egg muffins to prep on a Sunday before a busy week! Easy egg muffins to prep on a Sunday before a busy week!
Number of Servings: 10


    6 eggs, scrambled with salt and pepper to taste
    1 tbsp. creamer or silk milk
    4 oz. baby bella mushrooms, chopped
    1 jalapeno pepper, chopped
    1 med. green pepper, chopped
    1 onion, chopped
    2 green onions, chopped
    4 slices of bacon, chopped


Preheat oven to 350 degrees. In a bowl, scramble 6 eggs and add creamer/silk, salt & pepper to taste. Chop all veggies & bacon, combine and saute in a pan until softened. Slowly add veggie/bacon mixture to eggs. Spray a muffin pan with nonstick spray (I use an olive oil spray), pour mixture into pan. Bake for 25 minutes or until golden brown on top. Remove muffins from pan and let cool on a plate. Store in an air tight container, should last a few days in the fridge. Zap for 30 seconds in the microwave to reheat.
