Introduction

I LOVE eggs Benedict, but OH those calories. But I realized the last time I treated myself and made it that I kept adding more and more lemon to the Hollandaise. So I realized, it's not that thick creamy sauce that totally does it for me, it's the LEMON. Here is total makeover of a favorite and very satisfying.

Savory, simple, elegant poached egg on toast and hits all the food groups. Plenty of protein from the egg and turkey, and spinach and tomatoes get you your veggies, and simple cheese to get a little dairy.

Ingredients

    1 large egg
    1 slice baby Swiss (or desired cheese or leave out)
    1 tsp Duke's Olive Oil light mayo mixed with 1TBS lemon juice
    1/2 cup baby spinach
    4 grape tomatoes (yellow and red)
    2 slices oven roasted turkey
    1 small slice hearty toast or whole wheat English muffin 1/2
    cider or white vinegar, 2 capfuls

Tips

poaching eggs- break eggs 1 at a time into small ramekins
swirl water so it spins like a tornado and place into slow boiling water- careful not to have rolling boil or eggs will break up. The swirling water will allow the eggs to turn around on themselves instead of having spidery white fingers.

Top spinach with a dash of sea salt if you want more flavor


Directions

bring water to slow boil, with vinegar
chop tomatoes while water is coming to a boil
place eggs in water to poach
while eggs are cooking, toast bread and microwave spinach with turkey on top, and cheese on top of that
put mayonnaise on toast
flip spinach, turkey, cheese upside down on toast with spinach up
place poached egg on top of this
top with tomatoes
cut small slice in egg so yolk drains out on toast
Mix mayo with lemon juice and dribble on top of sandwich.

Voila, serve!
