Ingredients

    1/2C milk
    3 tablespoons sugar
    2 teaspoons salt
    3 tablespoons butter
    2 (1/4 ounce) packages active dry yeast or 2 teaspoons Instant Yeast (.34 oz.)
    1 1/2 C warm water
    5-6 C Unbleached bread flour

Directions

1. Stir year into warm water in bowl of mixer and let sit

2. Stir together milk, sugar, salt and butter and heat until butter is melted.

3. Stir milk mixture into yeast mixture and add 4.5 cups flour

4. Mix on speed 2 using dough hook until dough is combined, then add 1/2 to 1 cup more flour as needed until dough no longer sticks to bottom of bowl. A little sticking is fine but not too much. Continue to run the mixer at speed 2 for another two minutes, then turn it off.

5. Move dough to a greased bowl and cover, allow to rise for 1 hour

6. Prepare two loaf pans by greasing them and then, working with half the dough, roll it out flat on a floured surface and roll it up into a log. Pinch the long edges together and then turn the ends in until it is short enough to fit in your loaf pan. Repeat with the other half of the dough and let rise, covered for another hour

7. Heat oven to 400 degrees and bake the loaves for 30 minutes. Allow to cool before slicing. Slice as needed and store with the cut end down on a cutting board or plate to keep it from getting stale. Makes 16 slices per loaf.

    Made recipe with 2 1/4 cups of hot water (120-130 degrees) omitted milk. Easy to make great taste - 7/22/14
