Ingredients

    12 ounces fettucini Buitoni (I only use 9 ounces as that's one package)
    Pam Spray
    3/4 pound Boneless skinless chicken breast, cut into bite-size pieces
    1 package sliced fresh brown mushrooms (8-ounces)
    1 teaspoon crushed garlic
    2 teaspoons Italian Seasoning
    3 cups baby arugula (I use baby spinach)
    1 can diced tomatoes with basil and oregano
    1/2 cup white wine
    shredded parmesan cheese

Directions

1. Cook Pasta as directed. Meanwhile in a large skillet, heat oil over medium high heat, add chicken, mushrooms, garlic and italian seasoning. Cook and stir until chicken is cooked through and mushrooms have released juices, about 10 minutes.

2. Add Spinach and cook and stir until wilted. Add tomatoes and wine. Bring to a boil, reduce heat and simmer for 4 to 5 minutes. Drain pasta and toss with chicken mixture. Serve immediately with shredded Parmesan cheese.
