What I love about this recipe is its versatility. The roasted grapes are delicious with grilled bread as well or all by itself with a spoon! It could be served with any number of cheeses. Ingredients

    Grapes - red or green - 1 cup (remove)
    Goat Cheese, Soft, 1 oz (remove)
    Thyme, fresh, 1 tsp (remove)
    *Whole Wheat Flat Bread Pita, 1 serving (remove)
    *Kosher Salt, 1 tsp (remove)
    *Extra Virgin Olive Oil, 2 tbsp (remove)

Tips

1. can use ricotta cheese if desired
2. swap out pita for a nice crusty french bread
3. put the pita in the toaster instead of grill pan- I often do it this way. Just make sure you toast it before adding the grapes


Directions

1. Preheat oven to 450ºF. Spread grapes onto a sheet pan. Drizzle with olive oil. Sprinkle with salt. Lay thyme leaves over top. Toss all together gently with your hands. Place pan in the oven for 7 to 9 minutes or until grapes just begin to burst. I prefer the shorter roasting time - it’s nice when some of the grapes remain in tact.

2.Heat a grill or grill pan to medium-high. Brush the pita with olive oil. Grill until nice and toasty.

3.Assemble the flat bread pizza: Spread fresh goat cheese over pita. Top with roasted grapes. Sprinkle additional thyme leaves over top along with fresh cracked pepper and roasted pepper flakes for some spice.

Serving Size: 1 serving is half a pita
