Number of Servings: 80


    1 pound butter (4 sticks/2 cups)
    8 cups white flour
    1.75 cups granulated sugar
    2 eggs
    1/4 tsp cream of tarter
    1/2 tsp baking soda
    1/2 cup milk
    1 tsp lemon extract (or substitute with almond)
    Green sugar


Mix flour, butter and sugar together. Mix will be powdery.

Mix rest of ingredients, add to dry mix.

Roll dough 1/4" thick and cut out using shamrock cookie cutter. Sprinkle with green sugar.

Bake at 350 degrees for 12-15 minutes on a ungreased cookie sheet.

Makes approx 6 1/2 dozen cookies.

  • Shortbread cookies are family we don't make them often! Never found a good one made with something other than butter though! And Yes, this recipe can easily be cut down.... My old trusty Betty Crocker recipe is 2 c flour, 3/4 c butter, 1/4 c sugar. That's it..! Enjoy
