Introduction

These are also good if you substitute 1/2 ripe banana, mashed, for the blueberries. These are also good if you substitute 1/2 ripe banana, mashed, for the blueberries.

Ingredients

    1/4 cup whole wheat flour
    1/4 tsp. baking powder
    1 tsp., or 1 packet, of no-calorie sweetener
    dash of salt
    1/4 tsp. ground cinnamon
    1/2 cup frozen blueberries, slightly thawed
    3 tablespoons egg substitute
    1 tablespoon skim milk or soymilk
    1/8 tsp. vanilla extract

Tips

If using banana instead of berries, add the bananas with all of the other liquid ingredients.


Directions

Put all dry ingredients in a medium bowl. Sift or stir to mix. Add all other ingredients except blueberries and stir together just until moistened. Fold in blueberries. Spray a griddle or skillet with no-stick spray. Heat to medium. Use a spoon to ladle the batter onto the pan to form 4 or 5 small pancakes. Turn when bubble begin to form along edges and edges begin to look cooked. Only turn once. Cook on other side for a few minutes. Turn onto plate when done and enjoy!
