Ingredients

For Dough:
0.75 C milk of choice, warmed
2.25 t instant yeast (one packet)
1 T granulated sugar
2 T oil
1 t salt
1 T flax meal
3 T water
1 C whole wheat flour (regular or pastry)
0.5-1 C all purpose flour
For filling:
1 T oil
0.33 brown sugar
2 T cinnamon
1 granny smith apple, chopped
0.25 C chopped walnuts
For icing:
0.5 cup powdered sugar
3-4 tablespoons milk of choice
1.5 teaspoons vanilla extract
Directions
In a small bowl combine flax meal and water; set aside. Heat almond milk in the microwave 1 minute.
Add milk, yeast, and sugar to a bowl, let sit for about five minutes or until yeast activates. Then add oil, flax mixture, salt, and wheat flour.
Knead or turn on mixer with dough hook. Add all-purpose flour ¼ cup at a time until dough is not sticky; knead for 5-8 minutes.
Form dough into a ball, place back in bowl, and place in warm area for 1-1.5 hours.
On a floured surface, roll dough out into a 8" x 12" rectangle. Brush oil over surface and sprinkle brown sugar, cinnamon, apples, and walnuts over the entire surface. Roll dough away from you, tucking in as you go. Slice into eight rolls and place in a greased, round 8″ cake pan.
Cover with a warm towel and let rise again for 45 minutes to and hour.
*Refrigerate overnight if desired*
