Introduction

This is an awesome fried rice using healthy lower your cholesterol oil and lots of veggies with no compromise on taste over your favorite restaurant or take-out. Ingredients

    3/4 cup carrots chopped into tiny cubes
    1 cup of fresh mushrooms chopped into tiny cubes
    1/2 cup of frozen or fresh peas
    1/3 cup of chopped green onions
    1 clove garlic minced
    2 tbs unrefined sesame oil (toasted or untoasted)
    2 tbs butter
    3 tbs soy sauce
    2 eggs optional
    2 cups of dry rice (I like Jasmine)

Tips

Saute the vegetables in a slightly higher temperature oil then the butter and sesame oil such as canola.

The vegetables are added in order from slowest cooking to fastest, cook each variety until bright colored and starting to soften.

Keep the sesame oil and butter at a low temperature you don't want to scorch the nutrients out of the oil.

I like to use my Vidalia slicer to make perfect little cubes.


Directions

Cook 2 cups of dried rice. While the rice is cooking, saute the carrots until partially cooked in a very large pan. Add the peas, chopped green onions, and garlic, let them heat through. Add the mushrooms. Scramble the eggs in a separate pan and add to the mixture. Turn the heat to low. Add the oil, soy sauce and rice to the pan and mix. Adjust to taste.
