Introduction


Number of Servings: 7

Ingredients

    2 Packages Suzies Ready to eat Quinoa. (I bought it at Costco)
    2 Cups Garbanzo Beans (Could use Black Beans instead)
    1 Can Sweet Corn drained
    1 Pint Grape Tomatoes quartered
    1 Bunch Green Onions
    1 t. Cumin
    1/2 t. Dried Oregano
    1/2 t. Dried Basil
    2 Cloves Fresh Garlic
    1 Handful Fresh Cilantro
    Juice of one Lemon or Lime

Tips

If you can't find pre-cooked Quinoa simply follow the directions on the package and make 3.5 cups instead and add about 2 Tbls olive oil.


Directions

Mix all ingredients in a large bowl. Add salt and pepper to taste. Serve cold. If you want more of a Southwest flavor add a chopped Jalapeno or two and omit the Oregano and Basil.
