Ingredients

    olive oil
    onion (Valida)
    zucchini
    tomatoes(plum)
    garlic, minced

Directions

Saute onion in olive oil til soft. Add zucchini and a bit of water. Cover and simmer til soft. Add tomatoes, garlic, and seasoning. Simmer 1-2 minutes more.
