Ingredients

    8 eggs, large
    6 slices bacon - cooked on paper towel in microwave and crumbled
    4 T diced onion
    1/2 of 10 oz frozen spinach, thawed and squeezed dry
    2 T of chopped sweet red pepper
    1-2 oz extra sharp cheese

Directions

Preheat oven to 350
Spray muffin pans with Pam
Mix all ingredients
Divide into 12 muffin cups
Bake approx 20 minutes - until middle is set
