Introduction

Ingredients

    1 28 oz bag Ore-Ida Potatoes O'Brien
    1 medium sweet onion, diced
    1 medium yellow, orange or red bell pepper, diced
    1 can healthy request or low sodium cream of onion soup
    1 cup 1% milk
    3 cups low sodium, 5% fat diced ham
    1.5 cups low sodium cheddar cheese.
    if desired, light sour cream as a garnish (included in calorie and sodium count)

Directions

Mix all ingredients completely. Pour into a greased 9x13 glass cake pan. (I use Pam olive oil spray). Bake at 350 degrees for 45-50 minutes. Let set 5-10 minutes before serving. Enjoy.

Serving Size: Makes 8 servings (divide the pan into 8 equal sections)
