Introduction

Frozen Diced potatoes added to low sodium cheese, ham and fresh peppers and onions make up this great easy meal. Frozen Diced potatoes added to low sodium cheese, ham and fresh peppers and onions make up this great easy meal.
Number of Servings: 8

Ingredients

    1 28 oz bag Ore-Ida Potatoes O'Brien
    1 medium sweet onion, diced
    1 medium yellow, orange or red bell pepper, diced
    1 can healthy request or low sodium cream of onion soup
    1 cup 1% milk
    3 cups low sodium, 5% fat diced ham
    1.5 cups low sodium cheddar cheese.
    if desired, light sour cream as a garnish (included in calorie and sodium count)

Directions

Mix all ingredients completely. Pour into a greased 9x13 glass cake pan. (I use Pam olive oil spray). Bake at 350 degrees for 45-50 minutes. Let set 5-10 minutes before serving. Enjoy.

Serving Size: Makes 8 servings (divide the pan into 8 equal sections)
