Introduction

A LARGE filling salad! A LARGE filling salad!
Number of Servings: 2

Ingredients

    6 oz Salmon, with skin
    2 cloves garlic, sliced
    1 tsp dried Basil
    1 tsp coconut oil
    Juice 1/2 lemon

    6 cups baby spinach, washed & divided into two large bowls
    1/2 cup grape tomatoes, divided into 2
    1 large carrot, sliced or grated (to taste) divided into 2
    1 Haas avocado (yes it matters!), sliced thin & divided into two portions
    Lemon wedges for dressing


Tips

Can add whatever your favorite salad veggies...like Romaine if you like more crunch in your greens ;-)


Directions

Melt coconut oil & add slices of garlic.
Divide salmon into two servings, sprinkle basil on flesh side & place skin side up over garlic/oil in pan. Squeeze lemon over & cover on med/low heat until no longer dark ... until fish is done. Remove skin & break over greens while hot. Squeeze additional lemon over top & enjoy!
