Ingredients

    Pillsbury frozen pizza dough (nutritional value based on the Artisan variety)
    12 slices mozzarella cheese
    1 eggplant, sliced
    2 medium zucchini, sliced
    4 bell peppers, sliced (red, yellow, orange)
    1 red onion, sliced
    2 Tbsp olive oil, divided
    4 oz. ground turkey, browned
    1 cup marinara sauce, or less, to taste
    dried basil and oregano
    salt to taste

Directions

Place sliced vegetables in a roasting pan and drizzle with all but 1 tsp. of the olive oil. Salt to taste. Roast in a 425 degree oven, stirring every 5-10 minutes, for 20 minutes. Meanwhile, unroll the pizza dough and place in the pizza pan. Brush with the 1 tsp. of olive oil. When the vegetables are done, remove them from the oven and put the pizza dough in. Bake for 8 minutes. Mix the browned ground turkey with the marinara sauce and spread over the crust after it comes out of the oven. Top with the roasted vegetables. Sprinkle with the basil and oregano. Layer the cheese over the vegetables and return the pan to the oven. Bake for another 10 minutes or until browned sufficiently. Let rest for 5 minutes, then cut into 6 generous slices.
