Ingredients

Applesauce, unsweetened, .75 cup
Granulated White Sugar, 1 cup
Brown Sugar, .5 cup unpacked
Egg White WHIPPED
Banana, mashed, 1 cup
Flour, White unbleached, 1 cup
Whole Wheat Flour, 0.5 cup
Vanilla Extract, 1 tsp
Cinnamon, ground, 1 tsp
Nutmeg, ground, .5 tsp
Salt (table), .25 tsp
Rolled Oatmeal (plain), 1 cup dry
Baking Powder, 1 tsp
Raisins, 1 cup (not packed) (optional)
Tips
I only whipped the egg white until very frothy... not to soft peak stage.
Directions
Preheat oven to 375 F.
Prepare cookie sheet(s) with cooking spray
In a large mixing bowl mix all moist ingredients together. In separate bowl mix all dry ingredients together. Add dry ingredients to moist ingredients. Mix thoroughly until soft dough forms.
Drop by tsp about an 1 inch apart. Bake 15 minutes or until lightly browned.
Serving Size: makes 36 cookies.. 1 tsp each
