Spinach, frozen, 1 package (300 grams)
Eggplant, fresh, 4 cup, cubes
*veggies, green onion, fresh, chopped, 2 cup
Garlic, 3 clove
*Green chilly / Mirchi, 10 gram(s)
Ginger, ground, 3 tsp
*coriander fresh, 4 tbsp
*Coriander Seed, Ground (1 Tbsp), 2 tbsp
*Cumin Seed, Ground (1Tbsp), 2 tbsp
Pepper, red or cayenne, 2 tsp
*Cumin seed, 1 tsp
Asaefoetida 1 pinch, 1 tsp
*Turmeric Ground, 1 tbsp
*Salt, Sifto Table Salt, 1 tsp
*OIL - Olive Oil (Bertolli), 3 tsp
*Plum Tomato, Fresh, Raw, Large (5oz), 2 serving
Granulated Sugar, 3 tsp
Tips
Prepare everything before you start to cook.
Directions
Cut Eggplant into pieces, Green onion finely chopped, Dice tomatoes into small pieces.
Cook spinach in microwave for 5 to 6 min.
Add 3 tbsp. oil in wok when hot add cumin seeds, 1 cinemon stcik, whenlight brown add asaefoetida, crushed garliic/ginger/green chillies saulte it and add Ground coriander seeds,cumin seeds,turmeric add green onions and salt let it cook for 2 min. than add eggplant cook it covered for 5 to 7 min. then add diced tomatoes and sugar when tomato get mushed add spinach and let it cook for another 5 min. till everything gets nicely cooked. Let it simmer for 2 to 3 min. covered at slow temp. Take it out in a serving pot and garnish with chopped coriander.
