Ingredients

4 medium turnips (tennis ball sized), peeled & cut into 1/2" pieces
3 cups tap water
2 Tbsp white vinegar
1 Tbsp sea salt, divided
3 Tbsp Butter
3 Tbsp sour cream
2 large eggs, whipped
1/2 tsp fresh cracked black pepper
1/2 oz medium shredded cheddar cheese
1/2 oz shredded mozarella cheese
1/2 oz shredded parmesan cheese
Optional: Bacon bits
Tips
Top with bacon bits if desired.
Smaller turnips are less bitter so be picky when choosing your produce. The vinegar helps to draw out any additional bitterness.
Tastes awesome reheated in the microwave so make a load of the recipe & use it for meals later in the week.
Directions
Preheat oven to 400 degrees (I used my convection setting).
In a larges saucepan, add 1st 3 ingredients & 2 tsp of the salt (reserving 1 tsp for end of cooking seasoning). Bring to a boil, reduce heat & cover. Cook until tender - approx 25 minutes. Meanwhile, mix up cheese in a bowl & set aside.
Drain & add butter after returning to heat. Cook over medium-low heat to reduce liquid, about 2 minutes. Sprinkle with remaining 1 tsp salt & cracked pepper.
Using a hand mixer or food processor, mash turnips. Add sour cream, mix. Add eggs, mix, add about 2/3 of the cheese mixture & lightly mix.
Spread into a 8x8 buttered pan. Spread remaining cheese over the top. Bake at 400 degrees for 30 minutes.
