Introduction

Gluten free and made with no added sugars! But still so so good! Gluten free and made with no added sugars! But still so so good!
Number of Servings: 13

Ingredients

    2 bananas, mashed
    3/4 cup apple sauce
    1/4 cup yogurt
    2 Tbsp ground flax mixed with 1/4 cup water
    Tbsp coconut oil, melted *optional
    1 apple, grated
    1 cup quinoa flakes
    1/2 cup oats
    1/3 cup walnuts, chopped
    tsp vanilla and cinnamon
    pinches of nutmeg, allspice and salt

Tips

This can easily be made vegan by replacing the yogurt with 1/2 a banana, another 1/4 cup applesauce or 1/4 cup soy milk with Tbsp of flax

-Add other yummy things lke coconut flakes, berries, dried fruit, different nuts or seeds

-The quinoa flakes can be fully replaced with oats


Directions

-Mix all ingredients together.
-Scoop into sprayed or oiled muffin tins.
-Bake at 375 for 20 minutes or until toothpick comes out clean and muffins are starting to brown on top.
