    Chicken, Pineapple, Ketchup, onion, peppers, rice

Tips

I eat the chicken separately from the rice, but put the sauce from the pan over the rice and usually serve a green veggie with it as another side dish for a somewhat healthy meal.

I have also thrown it all into a crock pot, and then cut up the chicken after it was cooked, mixed the pre made rice in right before leaving for the pot luck. Very tasty!
You can drain the juice off which will save cooking time and possibly calories, but I leave the juice in to make the chicken breasts more tender and more sauce for the rice.

if you make 6 or more breasts and don't drain the juice, it will take about 2 hours to cook.


Directions

I use 1 can 16 oz pineapple, 1/2 cup ketchup, 2 table spoons chopped onion, and a couple table spoons of chopped sweet peppers. You can use bell peppers for a stronger, less sweet taste. I stir that together with 2 chicken breasts and put it in the oven to bake for about an hour.
I make the rice separately about the time the chicken should be done.
