Ingredients

1 Tbs olive oil
1 1/2 pounds lean pork loin, cut in thin strips
15 oz canned chunk pineapple in own juice
1/2 C water
1/3 C rice wine vinegar
1/4 C packed brown sugar
2 Tbs cornstarch
1 Tbs soy sauce
2 medium green peppers, sliced
1 small onion, sliced
3 C cooked white rice
Directions
Combine water, vinegar, sugar, soy sauce and reserved paineapple juice in a small bowl. Set aside.
Heat nonstick skillet with oil over medium heat and add pork and cook until golden brown, about 8-10 minutes. Add corn starch to liquids and pour over meat. Cook covered over low heat until meat is tender, stirring occationally, about 30 minutes.
Add peppers, onion and pineapple chuncks; cook 5 minutes. Serve over rice.
Serving Size: 1 C of pork mixture over 1/2 C rice
