Ingredients

    *Olive Oil, Extra Virgin, 2 tbs
    *1 med yellow onion, chopped
    *1 can Diced Tomatoes
    *1 Bell pepper Red medium, chopped
    *2 Zucchini, chopped
    *2 tsp Italian Seasoning
    *2tsp Garlic minced, in water
    *1tsp Black Pepper

Directions

Heat the olive oil in a medium skillet. Add the onion and saute until the onion is translucent. Add the tomato and red bell pepper. Cook over medium heat and reduce to a sauce like consistency. Add the zucchini and seasoning, and cook till preferred softness.

Serving Size: makes 4 1-cup servings
