Paleo Chocolate Bacon Muffin Paleo Chocolate Bacon Muffin

Ingredients

    2 cups almond or hazelnut flour
    3 Tbs Special Dark Cocoa Powder
    1 tsp cinnamon
    1/2 tsp baking powder
    1/2 tsp baking soda
    pinch of salt
    3 slices center cut bacon
    3 large eggs
    1/4 cup honey
    1/4 cup extra virgin olive oil
    3 Tbs So Delicious Coconut Milk
    1 tsp vanilla extract
    1 med sweet potato, baked, skin removed

Tips

To make this a dessert instead of a snack add some whipped chocolate icing.


Directions

Preheat oven to 350. Fry the bacon and set aside to drain and then crumble. Mix dry ingredients together, reserving bacon. Combine wet ingredients in the bowl including the mashed sweet potato. Add wet ingredients to the dry and mix thoroughly. Add in most of the bacon, reserving some to sprinkle on top before baking. Add mix to 12 reg size muffin tin sprayed with cooking spray. Sprinkle reserved bacon on top. Bake for 25 min. Allow to cool slightly before removing.
