Introduction

Warm, rich and very moreish! Warm, rich and very moreish!

Ingredients

    Leeks - 140g equivalent to one large leek
    Carrots - 170g equivalent to 3 carrots
    6 large tomatoes - (600g)
    1 400g of chopped tomatoes
    Tomato Puree(40g)
    1 large Onion(sweet and red)
    200g of sweet potato diced
    200g of red or yellow peppers(nice and crunchy)
    Stelline Pasta(50g) - I got mine from Asda, tiny little bits of pasta
    1 tablespoon of olive oil extra virgin
    2 oxo vegetable stock cubes

Tips

If not using the pressure cooker cook on main hob, stirring occasionally until all ingredients are soft.


Directions

Put Oil into the pressure cooker and add sliced leeks and chopped onions, stir occasionally and cook until soft. Then add all the other chopped ingredients to the pot bar the oxo cubes. Stir and then make up the oxo with 1 litre of boiling water, stir and then add salt and pepper to taste. Cook in pressure cooker for six minutes once the pressure is up. After opening the pressure cooker, semi blend with a stick blender so that there are still some vegetables whole in the pot. Serve with pitta bread stuffed with fresh salad and a little oil free dressing.
