Introduction

I needed a gluten free snack option so modified an existing recipe that I used. You cannot tell that these cookies are Gluten free and so healthy for you! Number of Servings: 48

Ingredients

    1 cup firmly packed brown sugar
    3/4 cup I cant believe its not butter
    1/2 cup granulated sugar
    1 egg
    1/4 cup water
    1 teaspoon vanilla extract
    2 cups Quaker oats
    1 cup Quinoa Flakes
    1 cup Robin Hood Nutri all purpose Gluten Free flour
    1/2 tsp baking soda

Directions

1. Preheat the oven to 350°. In a large bowl beat brown sugar, I Can't believe its not butter and granulated sugar until creamy. Add egg, water and vanilla beat well. Add combined Oats, Quinoa, gluten free flour and baking soda Mix well then add the raisins.

2. Drop dough in rounded teaspoonfuls onto ungreased cookie sheets.

3. Bake for 11-13 minutes or until the edges are golden brown. Remove to a wire rack to cool completely and store in a tightly sealed container.

Serving Size: makes 48 cookies
