.125 c skim milk
5 ritz crackers crushed
1 tbsp butter
.5 tsp salt
.5 tsp pepper
2 tbsp. shredded cheese, 2%
Directions
Cut up peeled eggplant and boil until tender. 5-10 min
Drain and return to pan. Stir in remaining ingredients x cheese. Pour into casserole dish, top w cheese and bake uncovered at 350 for 30 min
