"This recipe is very low calorie if you go easy on the pasta, rice and butter. It is also very versatile. You can omit any vegetable you dislike and add any you do like. Just consider the cooking time needed for any added vegetable. Also if the vegetables are too crunchy for your taste just steam them a little longer.
Be sure to add some protein to this meal. I like a little baked tempeh with mine. But some beans would be fine."

Ingredients

    1/2 cup sliced carrots1/2 cup fresh green beans1 cup broccoli florets1 cup cauliflower florets1 cup coarsely shredded cabbage1/2 cup sliced squash (yellow, zucchini, or mixed)1/2 cup coarsely chopped snow peas1 1/3 cup uncooked, long grain white rice

Directions

1. In a steamer basket (or colander) placed over a pot of boiling water, steam carrots for 5 minutes.

2. Add green beans and steam 5 more minutes.

3. Add broccoli and cauliflower and steam 5 more minutes.

4. Add cabbage and steam 5 more minutes.

5. Add squash and snow peas, steam 5 more minutes.

6. Drain well, add salt and pepper to taste. Serve over 2/3 cup of rice.

    Great recipe! I steamed some veggies and mixed them into the cooked rice. I cooked the rice in chicken bouillon instead of water. Yummy! - 1/6/16
