Ingredients

2 Tbs. chia seeds
6 Tbs. water
1 1/2 c. rolled oats
3/4 - 1 c. pecans, chopped
1 c. dates, chopped
1 c. coconut flakes
1/2 c. hemp protein powder (I used Manitoba Harvest - vanilla)
1/4 c. sesame seeds
2 Tbs. poppy seeds
2 tsp. cinnamon
1/2 tsp. salt
3 ripe bananas, mashed
1/4 cup coconut oil
2 tsp. vanilla extract
3 Tbs. maple syrup
Directions
1. Preheat oven to 350F.
2. In small bowl, mix the chia seeds and water together. Set aside while working on other ingredients.
3. In a large bowl combine oats, pecans, dates, coconut flakes, protein powder, sesame seeds, poppy seeds, cinnamon and salt.
4. In a another bowl, mix mashed bananas, coconut oil, vanilla and syrup (can probably use a food processor).
5. Add chia gel to banana mixture.
6. Pour wet ingredients over dry ingredients and stir until well combined.
7. Spread the batter into a baking pan (I used a 9x13) and smooth out the top with the a spatula. Bake for 25 minutes, or until edges are golden brown. Let cool completely and store in airtight container.
