Introduction

With plenty of protein and healthy fats, this carrot cake shake makes a perfect post-workout drink or meal replacement. With plenty of protein and healthy fats, this carrot cake shake makes a perfect post-workout drink or meal replacement.

Ingredients

    1 c vanilla soy milk
    3/4 c shredded carrots
    1/2 scoop vanilla protein powder
    Dash salt
    Dash cinnamon
    10 frozen pineapple chunks
    2 tsp unsweetened shredded coconut
    1 tsp vanilla
    1 tsp Butter Buds
    4 oz Neufchatel Cheese or cream cheese
    2-3 Tbsp Splenda

Directions

Put all ingredients into a blender and blend well. I prefer to leave it just shy of smooth... I like to get little chunks of pineapple and coconut. This recipe is pretty sweet, so you might add just 1 or 2 tbsp of Splenda at first, and then determine if more is needed.

    I used Greek yogurt instead of the cheese, and NO sweetener. I tasted it and it was yummy without any splenda or stevia. I will definitely make it again! - 12/6/12

    I wouldn't try this recipe with the soy product recommended because it not only has sugar added but also fructose, another form of sugar! I would use almond milk, twice as much calcium, with no sugar added and no CHO like soybeans that are are almost all GMO from Monsanto here in the USA. - 8/12/14

    I prepared with a combo of Greek Yogurt and Less fat Cream Cheese, substituted the soy with Silk Almond milk original , a touch of organic brown sugar , omitted the salt and butter buds and increased the servings to four - this is very delicious . - 4/13/14
